-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
-Deli slicer a food contact surface, was observed to have food residue and was not clean to sight and touch.
-Shelves for clean dishes contain cardboard and plastic sheets on shelves that are dirty and have grease and debris on them.

-Food Employee did not follow proper hand washing procedure. Soap was not used. The employee also kept the gloves on their hands while rinsing them under warm water. Instruct employees to remove their gloves and to wash their hand using soap and warm water. Correct this practice immediately.
-Food was held at 49-53°F, in the Leader refrigerator, rather than 41°F or below as required. Employee stated that the refrigerator was accidentally turned off. It is unknown how long the refrigerator was not running and therefore all TCS food stored in this refrigerator must be discarded. Food was discarded and the ambient air temperature in this refrigerator will be monitored to ensure that it reaches 38F or less.
-A Food Employee was observed washing their hands at the food prep sink rather than the designated hand washing sink. Correct this practice immediately.
-Old food residue was observed in the hand washing sink at the front window, indicating that this sink is used for purposes other than hand washing. Clean and sanitize this sink immediately and maintain it in a clean and sanitary condition at all times. This sink shall only be used for employee hand washing.
