Reheat the chicken to 165F and adjust the thermostat on the cabinet. Monitor the temperature of the chicken during hot holding to ensure that it remains at or above 135F.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection and failed to close facility when they did not have hot water to the facility. Facility contacted a plumber at the time of inspection to have system repaired

-Paper towel dispenser empty at the handwash sink in the basement area. COS by informing facility they may not use this area for food processing until it meets the minimum requirements for a food prep area as set forth by the Food Code.

-The potato cutter is filthy. Dismantle, clean and sanitize all parts to the cutter immediately and maintain it in a clean and sanitary condition.

-Soap was not available at the hand washing sink at the end of the bar in the Standard nor at the first floor front bar in One Centre Square. Supply these sinks with hand soap now and at all times.

-The equipment listed requires cleaning: cooking equipment, tables under the cooking equipment, knife rack, microwave oven, True freezer, True refrigerator, and the keg cooler at the bar. Clean all of the equipment and maintain it in a clean condition.

-The fry cutter and the slicer, in the second floor prep kitchen, require cleaning to remove dried food and grime. Dismantle, clean and sanitize the fry cutter and slicer.

-Food was held at 46-47°F, in the True refrigerator, rather than 41°F or below as required. Discard all food stored in this refrigerator as instructed. Monitor food temperatures during cold holding to ensure that they are held at the required temperature.
