March 19-- Mar. 19--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of March 3-9.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Time in lieu of temperature being used in the food facility to control ready to eat TCS foods without written procedures or documentation to verify disposition of food. The pizzas must be labeled with either a made by or a discard by time and be discarded 4 hours after they are removed from the oven.

-Raw chicken is being stored above cheese in the walk-in cooler. Raw chicken must be stored on the bottom shelf below ready to eat foods.

-Observed that the potato slicer was not cleaned after use.

-Paper towel dispenser empty at the hand wash sink that was located at the sink that was next to the fry bank, closest to the entrance to the store.

-Food Employee observed changing tasks that may have contaminated hands without a proper hand wash in-between. Employee went from rear of the store where cleaning was occurring directly into the food production section without first washing hands.

-The nozzle assembly on the freestyle soda machine in the dining section had a build up of syrup present on it. This assembly is to be cleaned on a more frequent basis to prevent build up from occurring.

-Old food residue, dishes and utensils observed in the hand wash sink, indicating uses other than hand washing. This was at the sink located next to the sauce table. Sink was also clogged with debris in drain. Hand washing sinks are only to be used for hand washing. No food debris should be in the sink, indicating improper use.

-Soup was held in a hot hold unit at 121F. Corrective action was possible, product was reheated on the stove top. Product in hot holding must be held above 135F.

-In the walk in refrigerator raw chicken was observed being stored on a shelf where packaged hams were underneath in a bin that was stored directly on the floor. Drippage was observed from the chicken box. No food is to be stored beneath raw chicken. No food is to be stored on the floor of the floor. A minimum of 6 inches above the floor is required for all food storage. Correct immediately.

-Food in the walk in freezer area stored open with no covering.All food must be covered at all times.

-Potentially hazardous ready-to-eat food prepared in the food facility and held for more than, 24 hours located in the walk in refrigerator, is not being date marked.Food may only be held for a period of 7 days, the day the food is prepared is day one.
