Feb. 16--Here are the results of food safety inspections in Lehigh and Northampton counties for the week of February 4 to 10.

The inspections listed here are those that fall under the jurisdiction of the Pennsylvania Department of Agriculture, as well as those county and local health departments that have elected to post results in the department's statewide inspection database.

-Raw chicken is being stored next to french fries and ground beef in the 2 door stainless steel refrigerator. Reorganize so that raw chicken is below and away from all other foods, ground beef is above the chicken, and french fries are above the ground beef. Refrigerator was reorganized.

-The following severely dented cans were observed on a retail sales shelf: 1 chef boyardee mini spaghetti, 1 goya Cannellini, 1 Silver Rapids Mackerel, and 1 chicken vienna sausages. Do not offer these items for sale and continuously monitor stock of canned items for damage. Product was discarded.

-Observed in the walk in cooler in the basement was reading 43 degrees, At the present time only vegetables were being stored. The PIC was directed to lower the temperature to 41 degrees or colder. The thermostat control was adjusted to lower the temperature in the unit. Unit is to be serviced if 41 degrees can not be maintained at all times.

-Deli meats and cheeses are not being date market with the opening date or the discard date. Label all deli meats and cheeses with either of these dates. Deli meats and cheeses are required to be discarded 6 days after opening.

-Moldy lettuce is being offered for sale/use in making sandwiches in the cold hold. Discard lettuce.

-The following dented cans were observed on the retail sales shelves: 1 can of bumble bee tuna, 1 can of Del Monte sweet peas, 1 can of coco lopez coconut milk, 1 can of red & white evaporated milk, and 1 can of Carnation evaporated milk. Do not offer dented canned food for sale. Discard or return the canned food for credit.

-Soap and paper towels were not available for the back room hand sink. Have soap and paper towels available at all times.

-Beef and chicken at internal temperatures of 125 and 126 degrees F were found in a hot holding unit in the facility. All food in hot holding must be maintained at or above 135 degrees F. The product was less than two hours out of temperature and was ordered reheated to 165 degrees F or above.

-In the front refrigerator and also in the walk in refrigerator food was observed not being covered. Cover all foods, at all times when being stored. Observed that several containers of raw chicken were stored in the walk in refrigerator, above uncooked foods and ready to eat foods. The PIC was instructed as to the proper hierarchy of storing food on shelves. A bottom shelf of raw chicken only is to be created and used.

-Observed that the hand washing sink in the front of the restaurant had a coffee cup in the basin. No items are to be in the hand washing sink at any time, this does not allow the sink to be used as it should be. Remove coffee cup and don't place any items in the sink.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The Person in Charge must know and enforce food safety in the facility.

-Employees are eating and drinking in the dry storage room as evidenced by dirty utensils found in this area. Employees may only eat in the dining room or at another designated location where there is not a risk of contamination of food or food equipment.

-Broken eggs shells were found in the bulk container of BBQ sauce. Food which has become contaminated must be discarded. The BBQ sauce was subsequently discarded. Leftover chicken breading was being kept in the facility. After the chicken breading has been used, the leftovers must be discarded as they have been in contact with raw chicken. The leftover chicken breading was subsequently discarded.

-The two slicers were dirty. Clean and sanitize the slicers.

-The Person in Charge does not have adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection. The Person in Charge must know and enforce food safety in the facility.

-Observed in the employee bathroom that hand soap and paper towels were not available. Also the hand washing sink in the kitchen was in need of paper towels at the dispenser. Place soap and paper towels at the required locations.

-Observed in the walk in refrigerator that there was a bowl of raw chicken stored above cooked noodles on the shelf below, also observed raw beef stored above other food products on the shelf beneath it. This was corrected by the person in charge while the inspection was being done. Upon completion of this the food was being stored in the proper hierarchy on the shelves.

-The pizzas held at room temperature are not labeled. Pizzas held at room temperature must be labeled with either a made at or discard by time. Pizzas may not be held for more than fours hours.
